Yoshimura has the product "Stain Magic Cleaner" which is made exactly for the purpose to remove the blue colour from the exhaust pipes. It is acidic rubbing compounds, and smells bad. You need to put your rubber gloves on to handle.
It takes time, but you can make your pipes like new. At first it erases blue, the pipe comes to look dull, then you polish the header on and on, finally the shine comes back. It is magic, and rewarding. I did it on my Savage header pipe, and result was perfect. I will do it again if the pipe becomes blue.
